Two to three weeks ahead for food, and earlier for anything made to order or engraved. Elul is the busiest stretch of these vendors' year, and the good ones close their books before Erev Rosh Hashanah rather than on it.

It varies, and it is the first thing to ask. Some deliver locally, some ship nationally, and some are collection only. Ask about the delivery window as well as the area — everybody wants their delivery on the same afternoon.
