Order as early as you can. Lulav and etrog sets are harvested and shipped on a tight seasonal calendar, and the good sets sell out in the two weeks before Yom Tov — precisely when everyone remembers they need one. If you are ordering online rather than buying in person, give yourself at least two weeks of buffer before Erev Sukkos.
A pop-up or easy-setup sukkah is generally a job for two people and well under an hour, with no tools beyond what comes in the box. That is the entire point of the design — the traditional alternative is a morning of panels, bolts and one missing bracket.
A bamboo schach mat is a roll of thin bamboo slats laid across the sukkah frame as the roof. Measure the open span of your sukkah and buy to cover it fully, allowing overlap between mats. Whether a particular mat is acceptable for your sukkah is a question for your rav — kashrus standards for schach vary, and a product listing is not the place to settle it.
